Ingredients in Triple Berry Cobbler Recipe

  • fresh strawberries
  • fresh raspberries
  • fresh blackberries
  • honey or agave

Cinnamon Crumble:

  • flour
  • cinnamon
  • butter
  • brown sugar or coconut sugar
  • oatmeal
  • vanilla
  • frozen vanilla yogurt and mint leaves for garnish

How to make Triple Berry Cobbler Recipe

  • Preheat oven 350 degrees.
  • Coat 8×8 pan with cooking spray.
  • Combine berries in mixing bowl, gently coat with vanilla and honey or agave.
  • Allow to rest for 10 minutes.
  • In small mixing bowl, cut butter into flour until pea size, add brown sugar and oats.
  • Add cinnamon; lightly mix to combined.
  • Place berries in pan, evenly spread crumble on berries.
  • Cook for 40-45 minutes or crumble is lightly browned and berries are bubbling.
  • Serve warm with frozen yogurt or light cool whip.

Happy Fit Friday all! Spring break is drawing to a close. We have spent the week running, playing, soaking in sun, hiding from snow, playing volleyball, and everything in between. It was pretty great, even if it didn’t seem to provide the rest I was hoping for, but let’s be real, that never comes with kids in the picture.

With marathon at the beginning of the week I spent the rest of the week enjoying some down time and recovering. It got me thinking about the importance of recovery on a regular basis and smaller scale. In other words, weekly recovery that we all need.

There are lots of reasons why it is important to take rest days. The two biggest for me are to reduce injury risk and to keep me motivated. Taking a day off once a week seems to be just what I need to stay on a training schedule or even just to simply stay excited to hit the gym, trail, or road.

So what should you do on those rest days?

There are plenty of ways to fill time in our lives. If you are struggling to figure out what to do on a rest day you need to take a good look at your life.

Pick up a book, call a friend, clean your house, enjoy your kids. All great things to do.

Being healthy is a big part of life and exercise is a part of that, but your life should not revolve around gym time or workouts.

Remember, life is all about balance and living life to the fullest!

  • 1 1/2 cup fresh strawberries, thick sliced
  • 1 1/2 cup fresh raspberries
  • 1 1/2 cup fresh blackberries
  • 1/2 cup honey or agave
  • 1/2 teaspoon vanilla
  • Cinnamon Crumble:
  • 2/3 cup flour
  • 3/4 teaspoon cinnamon
  • 1/2 cup butter, small diced
  • 1 cup brown sugar or coconut sugar
  • 1 cup oatmeal
  • 2 cups frozen vanilla yogurt
  • mint leaves for garnish
