Ingredients & Substitutions

This section explains how to choose the best ingredients for roasting cauliflower, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.

  • Cauliflower– You can either cut a whole cauliflower head or you can use pre-cut cauliflower florets. The same method also works for roasted broccoli, romanesco, or broccoli and cauliflower together. You could also use the seasonings for cauliflower steaks as well.
  • Olive Oil– Adds flavor, helps the seasonings stick, and promotes caramelization. Avocado oil would work as well.
  • Seasoning – Sprinkle cauliflower florets with garlic powder(optional), sea salt, and black pepper for a delicious savory flavor. See more seasoning ideas below!

How To Cut Cauliflower For Roasting

Here is the easiest method for cutting cauliflower into florets. You don’t even have to remove the leaves and stems — they will come off when you cut away the core.

  1. Quarter. Cut the cauliflower into 4 wedges.
  2. Remove the core. Cut away the core from each quarter.

How To Roast Cauliflower In The Oven

This section shows how to make oven roasted cauliflower, with step-by-step photos and details about the technique, to help you visualize it. For full instructions, including amounts and temperatures, see the recipe card below.

  1. Prep. Preheat the oven. Cut cauliflower head into florets as shown above.
  2. Season. Place cauliflower in a large bowl. Drizzle with olive oil, and sprinkle with garlic powder (if using), salt, and pepper. Toss to coat.
  3. Arrange. Place cauliflower in a single layer on a large rimmed baking sheet. If you want to line it, I recommend using foil rather than parchment paper, because parchment paper will reduce browning. You’ll want to coat the pan lightly in oil if it’s not a great non-stick surface.

TIP: Don’t crowd the pan.

Each floret should be touching the pan, so make sure your pan is large enough. This will ensure even cooking, best texture, and caramelization.

  1. Roast. Bake cauliflower in the oven, tossing halfway through, until tender and browned on the edges. Garnish with fresh parsley if desired.

How Long To Roast Cauliflower?

Roast cauliflower in the oven at 400 degrees F for25-30 minutes. Keep in mind that time will vary depending on the size of the cauliflower florets.

Seasoning Variations

  • Lemon, Garlic, & Paprika – Prepare the same seasoning mix used for air fryer cauliflower: Add 3/4 teaspoon sweet or smoked paprika, 2 teaspoon lemon juice (or 1/2 to 1 teaspoon lemon zest), and include the optional 1/2 teaspoon garlic powder from the recipe below.
  • Italian Seasoning – Add 1/2 teaspoon of store-bought or homemade Italian seasoning.
  • Oven Roasted Cauliflower With Parmesan – Prepare the same seasoning sauce used for whole roasted cauliflower: In a small bowl, combine 3 cloves crushed garlic, 1/4 cup grated parmesan cheese, 1 teaspoon dried basil, 1 teaspoon dried parsley, 1 teaspoon dried thyme, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper. Drizzle the sauce over florets before roasting.
  • Buffalo Roasted Cauliflower – If you want spicy roasted cauliflower, you can use the same flavor combination as my buffalo cauliflower recipe. Follow the instructions above. Then, heat 1/2 cup buffalo sauce and 1/4 cup unsalted butter together. Toss cauliflower in the buffalo sauce to coat.
  • Curry Spiced – Add 1/2 to 1 teaspoon of curry powder.
  • Chili Lime – Mix 1/4 teaspoon sea salt, 1 teaspoon chili powder, 1 teaspoon smoked paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, and 1/8 teaspoon cayenne powder together. Sprinkle seasoning mix on cauliflower florets and roast. Finally, garnish with fresh cilantro.
  • Mexican – Use 1/2 teaspoon store-bought or homemade taco seasoning in place of garlic powder to give this cauliflower a Mexican twist for meatless tacos.

Storage Instructions

  • Store: Keep leftovers in an airtight container in the fridge for up to 4 days.
  • Reheat: Warm roasted cauliflower in the oven at 350 degrees F, until warm. The microwave works in a pinch, but the texture is best with the oven method.
  • Freeze: Let cauliflower cool completely, then store in the freezer for up to 3 months. Freezing cauliflower raw is not recommended, so you’d have to blanch it if you want to freeze before roasting.

FAQs

Why do you soak cauliflower before cooking? ›

If you're planning to roast the cauliflower whole or slice it into steaks, slice off the thick stem at the base. Drop the whole cauliflower head upside-down into cool, salted water. Let it soak for 10 to 15 minutes to remove dirt, residue and bugs.

Why is my roasted cauliflower mushy? ›

First, take care not to overcrowd your pan; if the cauliflower is packed in rim-to-rim, the moisture will not be able to escape as the florets cook, which will result in soft steamed cauliflower instead of roasted. Next, don't be overly generous with the oil — a light coating is what we're after here.

How healthy is roasted cauliflower? ›

When it comes to nutrition, cauliflower is a superstar. It's high in vitamins C and K, and is also a good source of folate, which supports cell growth and is essential during pregnancy. Cauliflower is fat-free and cholesterol-free. And it's low in sodium.

Is it healthier to steam or bake cauliflower? ›

How you cook cauliflower matters. You can keep more of its nutrients if you steam, roast, or stir-fry it. But boiling it can lower the levels of its B vitamins, vitamin C, and magnesium. Cauliflower is also a healthy low-carb, gluten-free alternative to legumes and grains.

What does vinegar do to cauliflower? ›

Adding vinegar to the cooking water when cooking cauliflower is a common technique that can help to reduce the strong sulfur smell that cauliflower can sometimes give off while cooking. The vinegar can help to neutralize the sulfur compounds in the cauliflower, resulting in a milder aroma and flavor.

What will adding lemon juice to the water for cooking cauliflower do? ›

Cauliflower should be cooked quartered, or cut into florets at the base of the stem. In kitchen lore, lemon juice, milk, flour and vinegar have all been recommended as additions to cauliflower cooking water, presumably to keep it white.

What is the secret to roasting vegetables? ›

If you crowd and overlap the veggies, they will steam and get mushy, not what we want! Roast vegetables at a high heat, 425 degrees F and make sure you preheat the oven so it is HOT when the veggies go in! Flip! For even browning and caramelization, flip vegetables halfway through cook time.

What brings out the Flavour of cauliflower? ›

This is true of any vegetable — boiling it will give you a flavor closer to the raw flavor, which means more bitterness and more astringency. Caramelizing it will bring out its hidden sweetness. This light, vibrant roasted cauliflower salad is a recipe I developed for the fall menu at Duo.

Why is my cauliflower not getting crispy? ›

Cauliflower has a very high water content, so it won't get crispy if you bake the florets crowded together. "Be sure to give each floret a bit of room so that the they have space for airflow. I'd also recommend baking them on a silicone baking mat," says Blay.

What color cauliflower is healthiest? ›

Purple. Purple cauliflower is the healthiest option, with numerous advantages. The purple hue is due to the antioxidants called anthocyanins. These are the pigments present in various other plants and plant-based products, including red cabbage and red wine.

Can I eat too much cauliflower? ›

While everyone's tolerance is different, too much cauliflower can create G.I. distress, like excess gas and bloating. “Make sure to drink enough water to move it through your system,” suggests Lincoln. Cooking it can also dial back digestion woes.
